Jack-O-Lantern Sushi

A few years back I saw these cute little Jack-O-Lantern sushi characters and I wanted to try them out myself.  You know we love the Japanese culture and making Japanese food.  I made these little characters up a couple of years ago and when I came across my photos of them as I was organising my files, I thought now was the perfect time to share.

You don’t need many ingredients:

  • Sushi rice
  • Sushi vinegar
  • Salmon (you can purchase pre-sliced salmon)
  • Nori
  • Plastic wrap

How to create a sushi Jack-O-Lantern

Make your sushi in the usual way.  If you haven’t made sushi rice before, I found this recipe very helpful.

Take a slice or two of your salmon and lie it on a piece of plastic wrap.

Once your sushi rice is ready, pick up a handful, and mould it into a ball.  Put the rice on top of the salmon.

Pick up the edges of the plastic wrap, and twist the wrap around, like you do when you twist up the end of a bread bag before putting a clip on it. (This sounds complicated but it’s really very easy, there are some nice pictures of the process here)

Once the ball is nice and tightly formed, carefully take it out and place it on your serving plate.

Then cut little shapes out of a piece of nori and place them onto your ‘pumpkin’ shapes.

A Japanese meal to celebrate Halloween at Castle View Academy

These would be great in a bento box, a party (kids or adults), or just for a fun family meal.
